Beef Tenderloin Marinade By Paula Deen

(amounts guessed from observation)

3/4 c lemon juice
2 c water
2 c soy sauce
1 1/2 c brown sugar
1 c parsley, fresh
2-3 tbsp thyme, roughly chopped/snipped
1 tbsp Worcestershire sauce
1 c bourbon
  1. wrap tenderloin in twine to keep it together after it is cooked
  2. put tenderloin in pan
  3. pour marinade over loin
  4. cover
  5. place pan in refrigerator between 4 hours and overnight

a loin with the girth of a baseball will be medium rare in about 25 minutes.  Rotate the meat occasionally to ensure even heating.  She took hers out when it was about 125 degrees.  That was a little under medium rare, she said, but that it would continue cooking off the grill.
