Davids Papusas

Ever since having them, I've been wanting to learn how to make them.  This is what I've got so far.  I'm happy with the results.


2 cups masa harina (I use Maseca brand so far)
2 3/4 cups plus some water
1 tbsp oil


  1. Pre-heat non-stick skillet or griddle to 350.
  2. Combine all.
  3. Pull out an amount a bit greater than the size of a golf ball.
  4. Mold into a ball, then press your thumb into the center to make a cup shape.
  5. Fill the cup shape with the filling you plan to use.
  6. Pull the edges up together so the filling is sealed in dough.
  7. Press flat-ish.
  8. Place on griddle.
  9. I cook them on the first side for a while, until they harden on the bottom.  Then I put butter on the hardened side and cook that side till browning occurs.  Flip and repeat.
  10. When browned on both sides, remove from heat.  They'll be hot for a while.  Enjoy.
