Ever since having them, I've been wanting to learn how to make them. This is what I've got so far. I'm happy with the results.
Ingredients
2 cups |
masa harina (I use Maseca brand so far) |
2 3/4 cups plus some |
water |
1 tbsp |
oil |
Procedures
- Pre-heat non-stick skillet or griddle to 350.
- Combine all.
- Pull out an amount a bit greater than the size of a golf ball.
- Mold into a ball, then press your thumb into the center to make a cup shape.
- Fill the cup shape with the filling you plan to use.
- Pull the edges up together so the filling is sealed in dough.
- Press flat-ish.
- Place on griddle.
- I cook them on the first side for a while, until they harden on the bottom. Then I put butter on the hardened side and cook that side till browning occurs. Flip and repeat.
- When browned on both sides, remove from heat. They'll be hot for a while. Enjoy.
Thoughts
- I wonder if they wouldn't be awesome if fried in about 1/4 inch of oil instead of dry-grilled.
Fillings
- Holls made a spinach dip with parmesan and other cheeses which ended up to be a great filling.
- I'm sure some taco-seasoned ground beef or cheeses would be good too.
- They're also good plain, with salsa.
