This is just some notes from a show
- Brown some ground carrots, onion, and celery (pureed)
- Add in meat (ground beef) and copious salt. Brown it.
- Add Tomato Paste. Brown it.
- Add a powerful red Wine, like Cabernet. Reduce it.
- Add water, so it covers meat by 1 inch.
- Taste for flavor, and maybe add salt.
- Add Thyme and Bay Leaf (which will remove later). Reduce.
- Remove some of it.
- Add undercooked pasta to pan and heat together.
- Add a little cheese and olive oil
- Stir vigorously.
- Serve
