Spaghetti Bolognese

This is just some notes from a show

  1. Brown some ground carrots, onion, and celery (pureed)
  2. Add in meat (ground beef) and copious salt. Brown it.
  3. Add Tomato Paste. Brown it.
  4. Add a powerful red Wine, like Cabernet. Reduce it.
  5. Add water, so it covers meat by 1 inch.
  6. Taste for flavor, and maybe add salt.
  7. Add Thyme and Bay Leaf (which will remove later). Reduce.
  8. Remove some of it.
  9. Add undercooked pasta to pan and heat together.
  10. Add a little cheese and olive oil
  11. Stir vigorously.
  12. Serve
