Texas Caviar Recipe

[recipe is untested by me, but friends atest to its deliciousness.]

1 can black-eyed peas
1 can shoepeg corn
1 can black beans
1 jar pimentos, chopped up a little
1 can jalapenos (seeds removed and cut up)-I only use about half
1 med red onion - I only use half of one
1 cup celery, chopped

Place all in a colander and rinse.

Combine 1 cup olive oil, 1/2 cup apple cider vinegar, 1/2 cup sugar.  Heat until sugar is dissolved.

Put bean mixture in a container and pour marinade over.  Refrigerate over-night.  Drain well, at least 1 hour before serving.

Serve with Frito's Scoops or Tortilla scoops.
